- 600 g pork rib
- 1 cup of soy sauce
- 1/3 cup mirin
- Worstershire sauce
- Ginger
- 200 g bean sprouts
- 1 green onion
- 1 kg pork bone
- 2 liters water
- 5-6 cloves of garlic
in the first part it talks about Tonkotsu meat what is that all the instructions talk about are Tonkotsu soup

Tonkotsu is pork meat, usually on the bone. (Not ham) Tonkotsu soup is the broth made from the meat.
Can we use chicken instead of pork?

Depending upon your taste, you can substitute it with any spicy sauce
